The Beetroot (Beta vulgaris), commonly known simply as the beet, finds its ancestral roots in the wild sea beet that grows along the coastlines of the Mediterranean and Western Europe. While ancient civilizations like the Romans and Greeks initially cultivated the plant for its medicinal leaves, it wasn’t until the 16th century that the bulbous, earthy taproot we recognize today was selectively bred for culinary use in Central and Eastern Europe. By the 19th century, beets gained massive industrial importance following the discovery that they could be used to produce sucrose, leading to the rise of the sugar beet industry.

In the modern functional beverage market, the vibrant red “garden beet” has become a powerhouse ingredient, specifically in the forms of NFC (Not From Concentrate) juice and juice concentrate.
