Guava (Psidium guajava) is a tropical fruit native to Mexico, Central America, northern South America, and the Caribbean. Guava puree and guava juice concentrate is highly regarded for its intense tropical aroma, vibrant color, and rich nutritional profile (containing up to four times the Vitamin C of an orange) guava is a staple ingredient in tropical food and beverage manufacturing. In commercial processing, two primary color varieties dictate product formulation. Pink Guava is the premier choice for industrial applications. Rich in natural carotenoids (primarily lycopene), pink guava provides an eye-catching rosy hue, creamy texture, and a sweet, aromatic profile reminiscent of a blend between strawberry, pear, and mango. Used extensively in tropical juice blends, smoothies, yogurts, and nectar bases. White Guava features a pale cream to yellowish pulp with a higher natural acidity and mild, sweet floral notes. White guava is ideal for formulations where manufacturers want authentic tropical flavor without altering the natural color of the finished food or beverage matrix.

Under FDA guidelines (21 CFR § 101.30), the standard single-strength baseline for 100% guava juice is 7.7° Brix.

  • To reconstitute 20° Brix Puree Concentrate: Dilute 1 part concentrate with 1.60 parts water by weight (dilution ratio ~1.6:1).

  • To reconstitute 25° Brix Puree Concentrate: Dilute 1 part concentrate with 2.25 parts water by weight (dilution ratio ~2.25:1).

  • To reconstitute 65° Brix Clarified Juice Concentrate: Dilute 1 part concentrate with 7.44 parts water by weight (dilution ratio ~7.44:1).

Raw guava flesh contains microscopic hard sclereids, commonly known as stone cells, which create a gritty texture if left untreated. During commercial puree processing, the pulped guava is passed through multi-stage rotary finishing screens with ultra-fine mesh openings. This process completely removes seeds and stone cell aggregates, producing a smooth, velvety puree that flows easily through processing pumps and filling nozzles.

Guava naturally contains up to four times the Vitamin C (ascorbic acid) of fresh oranges. In commercial beverage and food formulation, using single-strength guava puree or guava puree concentrate allows manufacturers to make front-of-pack “High in Vitamin C” or “Excellent Source of Antioxidants” nutritional claims naturally without fortifying with synthetic ascorbic acid. Additionally, this high concentration of natural Vitamin C acts as a functional antioxidant within blended matrixes, helping to preserve color stability and retard oxidation across the product’s shelf life.

Guava pulp is naturally rich in soluble pectin, giving its puree a dense, velvety body and smooth structural viscosity. For formulators developing clean-label or reduced-sugar beverages, incorporating guava puree delivers a luxurious mouthfeel, pulp suspension, and natural cloud without the need for added hydrocolloids, gums (such as xanthan or guar gum), or modified food starches.
