Elderberries are small, dark purple to black berries that grow in clusters on shrubs of the Sambucus genus, commonly found in Europe and North America. The berries are typically harvested in late summer to early fall and have a naturally tart taste when raw. They grow on flowering plants that produce large, white blossoms before fruiting. Elderberries must be cooked before consumption, as raw berries and other parts of the plant can be toxic. They have been used for centuries in traditional practices and are often found growing wild as well as being cultivated.
