Cranberry

Our customers use cranberries because of their distinct tart flavor, functional properties, and strong association with health benefits. Cranberries are commonly processed into juices, concentrates, dried forms, and extracts, making them versatile for use in beverages, snacks, sauces, and supplements. Their naturally sharp taste helps balance sweetness in products and enhance overall flavor profiles. Cranberries are also rich in antioxidants and are widely associated with urinary tract health, which supports targeted health marketing claims. Additionally, their bright red color improves visual appeal and can serve as a natural coloring ingredient. Their availability in shelf-stable forms makes them convenient for large-scale production and consistent product formulation.

Brothers International is proud to offer various fruit juices and concentrates as USDA Organic certified.

Harvest Seasons

Cranberries grow in the Southern hemisphere from February to April, and in the Northern hemisphere from September to November.

Botanical: Vaccinium Macrocarpon / Vaccinium Oxycoccus

Nature’s Sharpest Ruby

Cranberries are small, round berries that grow on low, creeping vines in sandy bogs and wetlands; commonly processed into cranberry NFC juice and juice concentrate. They are native to North America and have been used for centuries, including by Indigenous peoples for food and traditional purposes. Cranberries are typically bright red when ripe and have a firm texture with a naturally tart flavor. They are harvested in the fall, often using a method called wet harvesting, where fields are flooded to make the berries easier to collect. Fresh cranberries have a relatively long storage life compared to other berries when kept properly.

The American cranberry (Vaccinium macrocarpon) is a low-growing, evergreen dwarf shrub native to the acidic peat bogs and glacial wetlands of North America. Renowned for its bright crimson-red pigmentation, sharp astringent tartness, and high concentration of unique bioactive compounds—specifically Type-A Proanthocyanidins (PACs), organic acids (quinic, malic, and citric), and Vitamin C—the cranberry is a vital functional workhorse across beverage, nutraceutical, bakery, and sauce manufacturing.

In commercial fruit ingredient processing, harvest methodology and cultivar selection dictate color intensity, acidity, and PAC concentration:

  • Commercial High-Yield Cultivars (Stevens, Ben Lear, Pilgrim & Mullica Queen): Engineered for dark red skin color, large berry size, high titratable acidity, and rich anthocyanin content. These cultivars are the backbone of commercial NFC juices, 50°–65° Brix clarified juice concentrates, and seedless purees.

  • Wet Harvesting vs. Dry Harvesting: Over 90% of processing cranberries are wet-harvested. Bogs are flooded with water, and mechanical eggbeaters dislodge the fruit from vines. Because cranberries contain four internal air pockets, they float to the surface for rapid gathering. Wet-harvested fruit is immediately delivered to receiving stations for washing, de-stemming, pressing, or pulping. Dry-harvested fruit is gathered with mechanical combs, reserved primarily for fresh retail sales or whole IQF berry processing.

Brothers International partners with origin processors who cold-press or pulp cranberries under precise thermal conditions to capture natural Type-A PACs and vivid red pigmentation while controlling natural tannin extraction.

Facts and Questions About Cranberry NFC Juice

As fruit ingredient experts, we can work with manufacturers to provide nearly any specification of cranberry NFC juice and cranberry juice concentrate – contact our team to get started. The table below represents a handful of the most common brix levels and concentration.

Target Brix Level Approx. Concentration Product Format Why Manufacturers Choose It & Applications
50° – 65° Brix ~6.67-Fold to 8.67-Fold Clarified / Filtered Cranberry Juice Concentrate High Yield & High Acidity. De-pectinized and fine-filtered to eliminate cloud and pulp while concentrating natural organic acids and vivid red color. Drastically lowers ocean freight and storage costs. Used in 100% juice blends, hard seltzers, dietary gummies, RTD teas, and energy drinks.
7.5° – 9.0° Brix 1-Fold (1:1) Single Strength / NFC Cranberry Juice & Puree Baseline standard (FDA 100% single-strength at 7.5° Brix). Un-concentrated fresh-pressed juice or single-strength pulp. Delivers intense tartness, dark red hue, and clean-label appeal. Preferred for premium 100% juice blends, craft cocktails (Cosmopolitans), and functional wellness shots.
  • Single-Strength Cranberry NFC Juice (7.5°–9.0° Brix): Pressed directly from fresh or frozen cranberries and pasteurized without water removal. It delivers intense tartness, natural ruby-red color, and clean-label appeal for premium juice blends and wellness shots.

  • Cranberry Puree (7.5° Brix single-strength or 20°–25° Brix concentrate): Milled from whole fruit pulp including skin tissue (available seeded or seedless). Retains natural insoluble fiber, natural pectin, and deep crimson color for bakery glazes, sauces, yogurts, and craft beer.

  • Clarified Cranberry Juice Concentrate (50°–65° Brix): Enzyme-treated (de-pectinized) and fine-filtered to remove all insoluble pulp, fiber, and cloud. Yields a clear, highly soluble crimson-red liquid that cuts shipping costs and integrates smoothly into clear seltzers, sports drinks, and gummies.

According to FDA regulations under 21 CFR § 101.30, the baseline value for 100% single-strength cranberry juice is 7.5° Brix.

  • To reconstitute 50° Brix Concentrate: Mix 1 part concentrate with 5.67 parts water by weight (dilution ratio ~5.67:1).

  • To reconstitute 65° Brix Concentrate: Mix 1 part concentrate with 7.67 parts water by weight (dilution ratio ~7.67:1).

  • To reconstitute 20° Brix Puree Concentrate: Mix 1 part concentrate with 1.67 parts water by weight (dilution ratio ~1.67:1).

Proanthocyanidins (PACs) are specialized polyphenol flavonoids found in cranberries. Unlike the Type-B PACs found in apples or green tea, cranberries contain unique Type-A PAC linkages. Type-A PACs inhibit E. coli bacteria from adhering to the uroepithelial cell walls of the urinary tract. CPG brands and nutraceutical formulators utilize standardized cranberry juice concentrate and cranberry NFC juice to deliver verifiable Type-A PAC milligrams per serving, supporting structure-function “Urinary Tract Health” claims on consumer labels.

Cranberries feature an unusually low pH (typically 2.3 to 2.8) and high titratable acidity, driven by a unique trio of organic acids:

  • Quinic Acid: Provides a sharp, medicinal-tart bite unique to cranberries and acts as a natural antimicrobial.

  • Malic Acid: Delivers a lingering, smooth fruit tartness that balances sweet juice matrixes.

  • Citric Acid: Adds a bright, quick acid burst and lowers product pH. In product development, small inclusion rates of cranberry juice concentrate act as a 100% natural acidulent, lowering formula pH, preserving color, and balancing sweet fruit flavors without synthetic additives.

  • Beverages & Cocktails: cranberry NFC juice is the foundational base for 100% cranberry juice blends (paired with apple or grape concentrate), RTD teas, hard seltzers, energy drinks, and craft cocktails (Cosmopolitans, Sea Breezes).

  • Craft Brewing & Distilling: Widely used in fruited sours, Belgian witbiers, Goses, hard ciders, and botanical gins.

  • Sauces & Culinary: cranberry juice concentrate and cranberry NFC juice are essential for holiday cranberry sauces, poultry glazes, BBQ marinades, and vinaigrettes.

  • Bakery & Confectionery: Used in pie fillings, pastry glazes, fruit chews, pectin gummies, and muffin inclusions.

Brothers International supplies commercial cranberry juice concentrates, cranberry purees, and cranberry NFC juices in versatile industrial packaging formats:

  • 5-Gallon Pails (~45–50 lbs): Designed for pilot plant runs, R&D bench testing, and craft manufacturing.

  • 55-Gallon Steel Drums (~500–550 lbs): Standard commercial industrial packaging, shipped frozen (-18°C) or aseptic with multi-layer barrier liners.

  • Frozen Storage (-18°C / 0°F or lower): Highly recommended for all non-aseptic NFC juices, cloudy purees, and concentrates to preserve natural Type-A PACs, vivid anthocyanin color, and Vitamin C for 18 to 24 months.

  • Chilled Storage (0°C–4°C / 32°F–40°F): Recommended for 50°–65° Brix Clarified Cranberry Juice Concentrate to prevent thermal browning over 12 to 18 months. Once unsealed, product must remain strictly refrigerated.

Because cranberry yields can be impacted by spring frosts in Wisconsin or autumn flooding delays in Massachusetts, relying on a single growing region creates supply chain vulnerability. Brothers International mitigates risk through strategic multi-region sourcing. By contracting directly with audited processing facilities across the United States, Canada (Quebec/BC), and Chile, we guarantee continuous volume allocations, multi-quarter contract stability, and predictable pricing year-round.
