Plum

Our customers use plums because of their natural sweetness, rich color, and versatility in both fresh and processed forms. Plums have a sweet-tart flavor that works well in products like juices, jams, sauces, desserts, and baked goods, helping to enhance overall taste and balance sweetness. Their deep red to purple color adds visual appeal and can serve as a natural coloring element. Plums are also rich in vitamins, antioxidants, and fiber, supporting health-focused marketing claims. They are commonly processed into purees, concentrates, dried forms (such as prunes), and extracts, which extend shelf life and make them convenient for large-scale manufacturing and consistent product formulation.

Brothers International is proud to offer various fruit juices and concentrates as USDA Organic certified.

Botanical: Prunus Domestica

From the Caspian to the Court

Plum juice concentrate comes from the smooth-skinned stone fruit of the same name, belonging to the genus Prunus, the same family as peaches, cherries, and apricots. They come in a variety of colors, including red, purple, yellow, and green, depending on the type. Plums have a juicy flesh that surrounds a single hard pit in the center. They are believed to have originated in regions of Europe and Asia and have been cultivated for thousands of years. Plum trees grow best in temperate climates and typically produce fruit in the summer months. The fruit is delicate and can vary in sweetness and firmness depending on the variety and ripeness.
The plum (Prunus domestica and Prunus salicina) is a diverse, cold-hardy stone fruit cultivated globally for its complex flavor profile—balancing intense natural sweetness with sharp, tannic skin acidity—and its high concentration of dietary fiber, sorbitol, and antioxidant polyphenols (particularly anthocyanins). In commercial processing, plum varieties are generally categorized into two primary groups based on their botanical lineage and processing characteristics:
European Plums (Prunus domestica) include the famous D’Agen (French prune plum), Victoria, and Damson varieties. These plums feature dense, freestone flesh with extremely high natural sugar levels (Brix) and low moisture content. They are the industry standard for rich plum puree concentrates, dried prune juice concentrates, and dark, jammy flavor profiles. Japanese Plums (Prunus salicina) include varieties like Santa Rosa, Black Amber, and Friar. These plums are juicier, larger, and feature vibrant red-to-purple flesh and skin. Japanese plums are highly sought after for pressing brilliant red-purple NFC plum juices and clarified juice concentrates, delivering bright tartness and floral aromatics.
Brothers International partners with origin processors who meticulously harvest and sort plums to achieve the perfect balance of skin-tannin astringency and flesh sweetness. The fruit is then immediately de-stoned and either pressed into liquid juice or refined into smooth, fiber-rich purees.

Facts and Questions About Plum Ingredients

As fruit ingredient experts, we can work with manufacturers to provide nearly any specification of prune juice concentrate and prune NFC juice – contact our team to get started. The table below represents a handful of the most common brix levels and concentration.

Target Brix Level Approx. Concentration Product Format Why Manufacturers Choose It & Applications
65° – 70° Brix ~4.5-Fold to 4.9-Fold Clarified Plum Juice Concentrate High Clarity & Deep Color. De-pectinized and fine-filtered to remove insoluble pulp, resulting in a dark red-to-purple liquid. Drastically reduces freight costs and cold-storage footprints. Ideal for clear beverage blends, hard seltzers, gummy candies, and flavor bases.
30° – 32° Brix ~2.1-Fold to 2.2-Fold Plum Puree Concentrate Rich Texture & Natural Pectin. Gently evaporated to remove water while retaining natural fruit pulp, dietary fiber, and thick viscosity. Remains pumpable for factory lines. Used in yogurts, bakery fillings, craft beer (fruited sours/stouts), and savory meat marinades.
14.3° – 16.0° Brix 1-Fold (1:1) Single Strength / NFC Plum Juice & Puree Baseline standard (FDA 100% single-strength at 14.3° Brix). Un-concentrated format delivering fresh-harvest flavor, tart skin notes, and natural body. Preferred for clean-label “Not From Concentrate” juice blends, premium craft ciders, and artisanal fruit preps.

Plum Puree Concentrate (30°–32° Brix) retains the fruit’s natural insoluble fiber, pulp, and skin particles. Because plums are naturally high in pectin, this concentrate provides significant viscosity, dark color, and jammy texture, making it ideal for bakery fillings, yogurts, and savory sauces. Clarified Plum Juice Concentrate (65°–70° Brix) undergoes enzyme de-pectinization and ultra-filtration to remove all solids and cloud, yielding a clear, highly concentrated liquid that is perfect for clear beverage blends, hard seltzers, and confectionery gummies where visual clarity is required.

According to FDA regulations under 21 CFR § 101.30, the single-strength standard for 100% plum NFC juice is 14.3° Brix.

  • To reconstitute 30° Brix Puree Concentrate: Mix 1 part concentrate with 1.21 parts water by weight (dilution ratio ~1.2:1).

  • To reconstitute 65° Brix Clarified Juice Concentrate: Mix 1 part concentrate with 4.04 parts water by weight (dilution ratio ~4:1).

  • To reconstitute 70° Brix Clarified Juice Concentrate: Mix 1 part concentrate with 4.45 parts water by weight (dilution ratio ~4.45:1).

While botanically related, plum juice and prune juice serve different functional purposes. Plum Juice Concentrate is produced by pressing and concentrating fresh, raw plums, resulting in a tart, bright, and fruity flavor profile with red-to-purple pigmentation. Prune Juice Concentrate (often >70° Brix) is produced by water-extracting the soluble solids from plums that have been heavily dried (prunes) and caramelized. Prune juice concentrate delivers a distinctively dark, rich, molasses-like flavor and is widely used for digestive health formulations, natural caramel coloring, and savory meat tenderization.

Plum puree is a highly functional ingredient in savory food manufacturing. Plums naturally contain high levels of malic acid, sorbitol (a natural humectant), and pectin. When used in BBQ sauces, duck glazes, teriyaki sauces, and meat marinades, plum puree provides natural sweetness and tartness, aids in moisture retention (preventing meat from drying out during cooking), and acts as a natural thickening agent—allowing formulators to reduce reliance on refined sugars, synthetic gums, and artificial preservatives.

  • Beverages & Craft Brewing: Plum NFC juice used in dark fruit juice blends, botanical sodas, hard ciders, kombucha, and craft beers (especially lambics, fruited sours, and dark stouts).

  • Dairy & Frozen Desserts: Essential for fruit-on-the-bottom yogurts, swirl inclusions in ice cream, gelatos, and sorbets where a rich, dark fruit profile is desired.

  • Bakery & Confectionery: Plum puree is a classic base for European pastry fillings, tart glazes, fruit bars, and fruit leathers. Clarified plum concentrate is used in fruit gummies and hard candies.

  • Savory Sauces & Condiments: A staple ingredient in Asian-inspired plum sauces, hoisin sauces, BBQ glazes, and gourmet meat marinades.

Brothers International supplies commercial prune NFC juice, prune juice concentrate and other prune ingredients in standard B2B industrial packaging formats – you can contact us directly here on our website to get additional specific details:

  • 5-Gallon Pails (~45–50 lbs): R&D bench testing, pilot runs, and craft manufacturing.

  • Frozen Storage (-18°C / 0°F or lower): Recommended for all non-aseptic plum NFC juices and purees to preserve vibrant color, prevent fermentation, and maintain fresh organoleptic characteristics for 18 to 24 months.

  • Chilled Storage (0°C–4°C / 32°F–40°F): Recommended for 70° Brix Clarified Plum Juice Concentrate to prevent natural Maillard browning and preserve color stability for 12 to 18 months.

  • Aseptic Ambient/Chilled Storage: Aseptic plum products packaged in multi-layer barrier bags remain shelf-stable for 12 to 18 months unopened. Once unsealed, product must remain strictly refrigerated and be consumed within a brief production cycle.

Every beverage and food formulation requires precise technical parameters to perform consistently on automated production lines. Beyond standard ingredient delivery, Brothers International supports your R&D and QA teams with comprehensive technical documentation and specification matching. For every batch of prune juice concentrate and other prune ingredients, we provide batch-specific Certificates of Analysis (COA), detailed product specification sheets, allergen statements, Non-GMO declarations, and heavy metal/pesticide testing.

Whether your product requires a specific pH range, custom titratable acidity, precise color intensity, or tailored seed filtration (down to specific mesh screen sizes), our technical specialists collaborate directly with your formulators to match your operational requirements. To accelerate your product development cycle, we maintain a rapid-ship sample program for bench testing and pilot-scale trials.

Because plum orchards are susceptible to late-spring frost damage which can drastically reduce regional yields, Brothers International protects our clients through a strategic, multi-hemisphere sourcing model. By contracting with audited processors across North America (USA), Europe (Serbia/Poland), and South America (Chile), we mitigate the risk of localized crop failures. Our logistics team handles direct import clearance, FDA/USDA compliance, and cold-chain transport, providing multi-quarter forward contracting and continuous inventory availability for North American manufacturers.
