Botanical: Averrhoa Carambola

Jewel of the Malayan Archipelago

Often referred to as the “Geometric Wonder” of the tropical world, the star fruit (or carambola) is a botanical anomaly that perfectly bridges the gap between a fruit and a mathematical puzzle. Star fruit is commonly processed into star fruit puree and puree concentrate for food and beverage manufacturing. Native to Southeast Asia, this ribbed berry is unique because it is entirely edible—from its waxy, Vitamin C-rich skin to its translucent, grape-like flesh, leaving absolutely no waste behind.

While its flavor is a sophisticated “fusion” of green apple, plum, and citrus, it contains a specialized neurotoxin called caramboxin; while harmless to most, it can be dangerous for those with kidney conditions, making it one of the few fruits with a medical “warning label.” Beyond its chemistry, the starfruit is the ultimate culinary architect; when sliced crosswise, it reveals a perfect, self-garnish five-pointed star that has made it a global symbol of decorative hospitality.

The star fruit, or carambola (Averrhoa carambola), is an exotic woody tree fruit native to tropical Southeast Asia and belonging to the Oxalidaceae (wood sorrel) family. Globally recognized for the distinct five-pointed star shape formed when sliced in cross-section, starfruit is equally valued in commercial food and beverage processing for its high natural moisture, balanced sweet-and-tangy flavor, delicate floral aromatics, and rich concentration of Vitamin C, potassium, and soluble dietary fiber.

In commercial fruit ingredient processing, cultivar selection is critical for controlling natural sweetness, titratable acidity, and oxalic acid levels:

  • Sweet Commercial Cultivars (Arkin, B10 & Kari): The global benchmarks for commercial puree processing. The Arkin variety (originally developed in Florida and cultivated throughout Central America) features bright golden-yellow flesh with high natural sugars, low fiber, and low natural acidity. The Malaysian B10 and Hawaiian Kari varieties offer exceptionally sweet, aromatic pulp with tender flesh and reduced oxalic acid content. These sweet cultivars yield silky, fragrant tsar fruit puree that blend seamlessly into beverage, dairy, and confectionery matrixes without harsh astringency.

  • Tart / Sour Cultivars (Golden Star): Possess higher natural titratable acidity (predominantly malic and oxalic acids) and a sharper, citrus-like tartness. Select tart purees are utilized in specialty savory sauces, tropical marinades, and acidulent blending systems where a punchy, sharp tropical top note is required.

Brothers International partners with origin processors equipped with custom de-seeding and finisher equipment. This machinery mechanically removes the flat central seeds and trims tough rib edges before milling the succulent golden flesh, yielding an ultra-smooth, homogeneous puree with authentic tropical flavor and zero seed tannin astringency.

Facts and Questions About Star Fruit Ingredients

As fruit ingredient experts, we can work with manufacturers to provide nearly any specification of star fruit puree and kiwi puree concentrate – contact our team to get started. The table below represents a handful of the most common brix levels and concentration.

Target Brix Level Approx. Concentration Product Format Why Manufacturers Choose It & Applications
20° – 25° Brix ~2.85-Fold to 3.57-Fold Star fruit Puree Concentrate Maximum Efficiency & Tropical Body. Gently concentrated under low-temperature vacuum to triple natural fruit solids while preserving delicate apple-grape-citrus aromatics and golden color. Formulated to remain pumpable on factory lines. Used in RTD beverages, hard seltzers, gummies, baby food, and fruit preps.
6.5° – 8.5° Brix 1-Fold (1:1) Single Strength Star fruit Puree
(Aseptic or Frozen)
Baseline standard (Single-strength at 6.5°–8.5° Brix). Un-concentrated whole pulp puree. Retains natural insoluble fruit cloud, pale golden color, and refreshing sweet-tart flavor. Preferred for clean-label 100% tropical juice blends, craft beers, sorbets, and culinary glazes.

Star fruit delivers a refreshing, multi-dimensional flavor profile that combines the crisp sweetness of green apple and white grape with the tart, juicy undertones of citrus and pear. In commercial product development, starfruit puree functions as an exotic tropical brightener. It contributes natural fruit cloud, smooth viscosity, and a pale golden hue without overwhelming subtle primary ingredients. Star Fruit puree is frequently blended with citrus, mango, passion fruit, or ginger to provide a sophisticated tropical top note.

Starfruit is an exotic tropical fruit and is not explicitly listed in the FDA’s 21 CFR § 101.30 table for juice standard of identity. Under FDA regulations, calculating juice or puree percentage for unlisted fruits is based on the natural soluble solids content of raw, single-strength fruit pulp. For starfruit, the commercial industry standard reconstitution baseline is benchmarked between 6.5° and 8.5° Brix (typically calculated at 7.0° Brix baseline).

  • Single-Strength Star fruit Puree (6.5°–8.5° Brix): Milled directly from sound, de-seeded fruit without water removal. It preserves the exact natural balance of fresh-picked aromatics, natural cloud, and crisp acidity, making it ideal for clean-label 100% juices, craft beers, and artisan sorbets.

  • Star fruit Puree Concentrate (20°–25° Brix): Produced by gently evaporating water from whole fruit puree under low-temperature vacuum conditions. It triples the fruit solids while maintaining smooth viscosity and natural yellow pigmentation. Concentrating to 20°–25° Brix drastically lowers ocean freight and frozen storage costs while ensuring the ingredient remains pumpable through standard industrial dosing pumps.

Using a standard commercial baseline of 7.0° Brix:

  • To reconstitute 20° Brix Concentrate: Mix 1 part concentrate with 1.86 parts water by weight (dilution ratio ~1.86:1).

  • To reconstitute 25° Brix Concentrate: Mix 1 part concentrate with 2.57 parts water by weight (dilution ratio ~2.57:1).

Like spinach, rhubarb, and beets, starfruit naturally contains oxalic acid, an organic dicarboxylic acid that contributes to the fruit’s pleasant tartness. However, high levels of oxalic acid can produce excessive astringency and are a consideration for individuals with specific kidney conditions. Brothers International manages oxalic acid through strict varietal sourcing: we prioritize sweet commercial cultivars (such as Arkin and B10), which naturally produce significantly lower levels of oxalic acid compared to wild or sour varieties. Every batch undergoes laboratory testing to confirm compliant acidity and safe, balanced flavor.

Star fruit pulp contains active polyphenol oxidase (PPO) enzymes that cause rapid darkening if exposed to oxygen during milling. Processors prevent browning through three complementary techniques:

  1. Antioxidant Buffering: Blending small percentages of natural organic acids (ascorbic acid and citric acid) to lower pH and inhibit oxidation.

  2. Vacuum Deaeration: Passing the milled pulp through vacuum chambers to extract dissolved oxygen.

  3. High-Temperature Short-Time (HTST) Pasteurization: Brief thermal flash-pasteurization denatures PPO enzymes while locking in fresh tropical aromatics and vibrant golden color.

  • Beverages & Hard Seltzers: Used in tropical juice blends, RTD teas, sparkling waters, hard seltzers, kombucha, and craft cocktails (Starfruit Margaritas/Mojitos).

  • Craft Brewing: Star fruit puree is highly favored in fruited wheat beers, kettle sours, Berliner Weisses, and tropical IPAs where its crisp tartness and natural fruit cloud enhance drinkability.

  • Dairy & Frozen Desserts: Essential for sorbets, paletas, ice cream swirl ribbons, and plant-based smoothies.

  • Bakery, Confectionery & Sauces: Used in tropical fruit gummies, pectin chews, pastry fillings, sweet-and-sour glazes, and Asian-inspired marinades.
