Peach

Passion fruit is a tropical fruit that grows on climbing vines in the genus Passiflora, native to South America. It is typically round or oval with a tough outer rind that can be purple or yellow when ripe. Inside, it contains a jelly-like pulp filled with many small, edible seeds. The fruit has a fragrant aroma and a juicy texture. Passion fruit vines grow best in warm climates and require support structures to spread and produce fruit. It has been cultivated for centuries and is now grown in many tropical and subtropical regions around the world.

Brothers International is proud to offer various fruit juices and concentrates as USDA Organic certified.

Harvest Seasons

Peaches grow in the Southern hemisphere from December to February, and in the Northern hemisphere from June to August.

Botanical: Prunus Persica

Nectar of the Sun

Peaches are soft, round stone fruits (processed into peach juice concentrate) that belong to the genus Prunus, the same family as cherries, plums, and apricots. They have a thin, fuzzy skin that ranges in color from yellow to reddish-pink, and a juicy interior surrounding a single large pit. Peaches are believed to have originated in China and have been cultivated for thousands of years. They grow best in temperate climates and are typically harvested in the summer. The fruit is delicate and highly perishable, which is why it is often handled carefully during harvesting and distribution.
The peach (Prunus persica) is one of the world’s most beloved temperate stone fruits, celebrated for its luscious aroma, velvety texture, naturally sweet flavor, and vibrant golden-yellow to delicate pink hues. Packed with dietary fiber, Vitamin A (beta-carotene), Vitamin C, and natural potassium, peach ingredients are a core foundational building block for food and beverage formulators globally.
In commercial processing, peach cultivars are categorized by flesh adhesion and color, which directly impact heat tolerance, viscosity, and sensory attributes:
  • Clingstone Peaches (Processing Benchmarks): Peaches where the flesh adheres tightly to the inner pit. Clingstone varieties (such as Ross, Carson, and Klamt) feature firm, non-melting flesh, high natural pectin, and deep golden-yellow color. They maintain structural integrity under thermal processing, making them the industry standard for smooth peach puree, peach puree concentrate, bakery preps, and baby food applications.

  • Freestone Peaches: Peaches where the pit separates easily from the flesh (such as Elberta and Elegant Lady). Freestone varieties possess softer, highly juicy flesh with vibrant, sweet aromatics. They are widely used for fresh-pressed peach juice concentrate, specialty beverage bases, and frozen retail inclusions.

  • White Peaches: Feature delicate pinkish-white flesh, low titratable acidity, elevated natural sugars, and sophisticated floral aromatics. White peach purees and concentrates are highly sought after for premium RTD teas, craft cocktails (such as Bellini bases), and gourmet confectionery.

Brothers International partners with top-tier origin processors equipped with high-speed mechanical pitting and de-stoning lines to cleanly isolate the rich flesh while completely eliminating pit fragment risk.

Facts and Questions About Peach Ingredients

As fruit ingredient experts, we can work with manufacturers to provide nearly any specification of peach juice concentrate and peach puree – contact our team to get started. The table below represents a handful of the most common brix levels and concentration.

Target Brix Level Approx. Concentration Product Format Why Manufacturers Choose It & Applications
65° – 68° Brix ~6.2-Fold to 6.5-Fold Clarified / Filtered Peach Juice Concentrate High Yield & Clarity. De-pectinized and ultra-filtered to remove all insoluble pulp and cloud while concentrating natural sugars and sweet aroma. Drastically cuts freight and cold-storage overhead. Used in hard seltzers, clear juice blends, RTD teas, gummies, and flavor bases.
30° – 32° Brix ~2.86-Fold to 3.05-Fold Peach Puree Concentrate (Yellow or White) The Industrial Puree Standard. Concentrates fruit pulp under low-temperature vacuum while preserving natural pectin, golden-orange color, and creamy mouthfeel. Formulated to max out around 30°–32° Brix so it remains pumpable on factory lines. Preferred for baby foods, yogurts, pastry fillings, and ice cream ribbons.
10.5° – 12.0° Brix 1-Fold (1:1) Single Strength / NFC Peach Puree & Juice Baseline standard (FDA 100% single-strength at 10.5° Brix). Un-concentrated format offering velvety texture, fresh harvest aroma, and rich golden or white pulp. Preferred for clean-label 100% fruit nectars, smoothies, craft brewing, and artisan preps.
  • Single-Strength Peach Puree (10.5°–12.0° Brix): Milled, un-concentrated fruit pulp that retains natural pectin, insoluble fiber, creamy texture, and fresh-picked peach aromatics.

  • Peach Puree Concentrate (30°–32° Brix): Produced by gently evaporating water from whole peach pulp under low-temperature vacuum conditions. It nearly triples natural fruit solids while preserving pulp viscosity and rich golden color, formulated specifically to remain pumpable through factory dosing equipment.

  • Clarified Peach Juice Concentrate (65°–68° Brix): De-pectinized and fine-filtered to eliminate all insoluble pulp, fibers, and natural cloud. Yields a clear, highly soluble golden liquid that lowers shipping overhead and integrates smoothly into clear drinks, gummies, and hard seltzers.

According to FDA regulations under 21 CFR § 101.30, the baseline value for 100% single-strength peach juice is 10.5° Brix.

  • To reconstitute 30° Brix Puree Concentrate: Mix 1 part concentrate with 1.86 parts water by weight (dilution ratio ~1.86:1).

  • To reconstitute 32° Brix Puree Concentrate: Mix 1 part concentrate with 2.05 parts water by weight (dilution ratio ~2.05:1).

  • To reconstitute 65° Brix Clarified Juice Concentrate: Mix 1 part concentrate with 5.19 parts water by weight (dilution ratio ~5.19:1).

Clingstone varieties (where the flesh firmly clings to the pit) feature firm, non-melting yellow flesh with higher natural pectin content and outstanding thermal processing stability. They do not break down or brown easily under pasteurization, making Clingstone the mandatory choice for commercial purees, bakery preps, and baby food formulas. Freestone peaches feature softer, juicy flesh with strong volatile sweetness; they are highly favored for un-concentrated NFC juices, craft cocktails, and fresh frozen applications.

  • Yellow Peach Puree: High in beta-carotene, offering a vibrant golden-orange color, balanced sweet-tart profile, and robust body. It is the commercial standard for smoothies, yogurts, bakery fillings, and classic peach nectars.

  • White Peach Puree: Low in titratable acidity with elevated natural sugars and delicate floral notes. White peach puree yields a pale, pinkish-cream visual appearance and is highly favored for high-end Bellini cocktail bases, RTD white teas, specialty gelatos, and gourmet confectionery.

  • Beverages & Craft Brewing: Foundational base for peach nectars, RTD iced teas (a major market driver), smoothies, hard seltzers, craft ciders, and fruited craft beers (wheat beers, IPAs, and sours).

  • Dairy & Frozen Desserts: Essential for fruit-on-the-bottom yogurts, drinkable yogurts, ice cream swirl ribbons, sorbets, gelatos, and paletas.

  • Baby Food & Infant Nutrition: Single-strength peach puree is widely used in infant food pouches and jars due to its gentle acidity, smooth texture, and high Vitamin A/C density.

  • Bakery, Confectionery & Sauces: Used in pie fillings, pastry glazes, fruit bars, fruit gummies, pectin chews, BBQ glazes, and tropical salsas.

Raw peaches contain active polyphenol oxidase (PPO) enzymes that cause rapid darkening when exposed to air. Brothers International partners with audited processors who apply immediate thermal flash-pasteurization to permanently deactivate PPO enzymes while locking in natural golden color. Furthermore, processors utilize multi-stage vibration sorters and high-precision mechanical finishing screens (down to 0.020″ mesh) to ensure finished purees are completely free of hard pit fragments before packaging.
