Durian

Our customers use durian because of its rich texture, high nutritional value, and strong cultural and regional demand, particularly in Southeast Asian markets. Durian has a naturally creamy, custard-like consistency, which makes it useful in products like desserts, ice creams, pastries, and fillings without the need for additional fats or thickeners. Its distinctive, intense flavor—while polarizing—allows manufacturers to create unique and premium products that stand out in niche and specialty markets. Durian is also a good source of energy, fiber, and essential nutrients, supporting its use in indulgent yet nutrient-rich foods. It is often processed into frozen pulp, paste, or puree, which helps manage its short fresh shelf life and makes it more practical for large-scale production and export.

Brothers International is proud to offer various fruit juices and concentrates as USDA Organic certified.

King of Fruits

Durian is a large tropical fruit known for its spiky outer shell and strong, distinctive odor (often expressed as durian puree or IQF). It is native to Southeast Asia, where it is often referred to as the “king of fruits.” Inside, the fruit contains soft, creamy flesh divided into segments, usually surrounding large seeds. The texture is rich and custard-like, and the flavor is complex, often described as a mix of sweet and savory. Durian grows on tall trees in warm, humid climates and is typically harvested when ripe fruits fall naturally from the tree. Due to its strong smell, it is sometimes restricted in public spaces in certain countries. Brothers International is a durian puree supplier, and can also provide other popular formats including durian IQF.

Durian (Durio zibethinus), revered across Asia as the “King of Fruits,” is a large, spiky tropical fruit native to Southeast Asia. Celebrated for its extraordinarily complex sensory profile, durian delivers a rich, custard-like texture, high natural lipid density, and a unique bittersweet flavor profile driven by a sophisticated blend of volatile organosulfur compounds and fruit esters. High in healthy fats, carbohydrates, dietary fiber, and potassium, durian serves as a high-value, exotic ingredient across the dairy, bakery, confectionery, and craft beverage sectors.

In commercial fruit ingredient processing, variety selection dictates flesh color, fat density, and aromatic intensity:

  • Monthong (Golden Pillow – Processing Benchmark): The undisputed global workhorse for industrial processing. Originating in Thailand, Monthong durians feature thick, pale-yellow flesh with high dry matter, low fiber, and a sweet, creamy, approachable flavor profile. Monthong flesh yields ultra-smooth durian puree and firm durian IQF segments, providing an excellent balance of sweetness, creaminess, and processing stability.

  • Musang King (Maw San / D197 – Ultra-Premium): The premier variety from Malaysia. Featuring deep golden-yellow flesh, Musang King is world-renowned for its silky, butter-like texture and intense, complex bittersweet flavor. Musang King puree and IQF flesh are highly sought after for luxury confectionery, gourmet mooncakes, high-end gelatos, and specialty bakery applications.

  • Chanee (D123): Features golden-orange flesh with a stronger, pungently sweet aroma and slightly higher fiber content, often blended for specialized flavor bases and craft brewing.

Brothers International partners with origin processors who utilize automated de-husking and de-seeding technology to isolate the rich, custard-like aril flesh without crushing the inner seed, locking in natural color and flavor.
