Harvest Seasons

Cherries grow in the Southern hemisphere from December to February, and in the Northern hemisphere from June to August.

Botanical: Prunus P. cerasus / Prunus P. avium

From the Black Sea to the World’s Tables

Cherries are small, round stone fruits that grow on trees in the genus Prunus, the same family as peaches and plums. Commonly processed into cherry NFC juice or cherry juice concentrate, cherries have a smooth skin that ranges in color from bright red to deep dark red, depending on the variety, and contain a single pit at the center. Cherries are generally divided into two main types: sweet cherries and tart (sour) cherries, each with different flavor profiles. They are typically harvested in the late spring and summer and are highly perishable when fresh. Cherries have been cultivated for thousands of years and are grown in temperate regions around the world.

Cherries are stone fruits (drupes) belonging to the genus Prunus within the Rosaceae family. In commercial food and beverage processing, the global cherry market is bifurcated into two distinct botanical species, each serving unique functional, nutritional, and sensory roles across consumer packaged goods:

  • Tart / Sour Cherries (Prunus cerasus – Montmorency & Morello Cultivars): The undisputed functional and culinary workhorse of the industrial processing sector. Montmorency is the benchmark American tart cherry variety, characterized by bright ruby-red skin, clear to translucent pulp, high natural titratable acidity (predominantly malic acid), and dense bioactive concentrations of anthocyanins (cyanidin-3-glucoside and cyanidin-3-rutinoside) and naturally occurring melatonin. European Morello varieties yield a deeper dark-crimson flesh and cherry NFC juice. Tart cherry ingredients are globally prized for athletic recovery beverages, sleep-support wellness elixirs, functional gummies, artisan preserves, and craft brewing.

  • Sweet Cherries (Prunus avium – Bing, Chelan & Lambert Cultivars): Celebrated for their deep mahogany-to-purple pigmentation, heart-shaped geometry, succulent flesh, and high natural sugar density (20.0°+ Brix single-strength). Sweet cherry delivers rich, rounded, wine-like fruit sweetness with mild acidity, serving as a primary ingredient for luxury dessert toppings, bakery fillings, dark chocolate confectionery, and premium 100% cherry NFC juice nectars.

  • Pulping & De-Stoning Engineering: Commercial cherry processing demands precise mechanical de-stoning (pitting). Cherry stones contain internal kernels rich in amygdalin (a cyanogenic glycoside that can break down into bitter benzaldehyde and hydrogen cyanide if crushed). Brothers International partners with processors who utilize gentle needle-punch and rubber-diaphragm de-stoners followed by high-definition optical sorting, laser inspection, and X-ray pit detection. This guarantees complete pit removal without kernel shattering, ensuring clean flavor, zero pit fragments, and pure fruit pulp.

Delivers intense dark-purple color, low acidity, and natural sweetness for premium nectars, smoothies, and dairy mix-ins.
  • Tart / Sour Cherry (Prunus cerasus – Montmorency): Features bright ruby-red juice with high natural titratable acidity (malic acid), sharp tartness, lower sugar content, and an exceptionally dense profile of anthocyanins and exogenous melatonin. Formulators select tart cherry primarily for functional wellness beverages, sleep tonics, athletic recovery formulas, sour craft beers, and products where bold tart fruit contrast is needed.

  • Dark Sweet Cherry (Prunus avium – Bing/Chelan): Features dark purple-to-black pigmentation, very low acidity, and naturally high soluble solids (20.0°+ Brix). It delivers deep, luscious fruit sweetness without sharp acidity. Formulators select dark sweet cherry for bakery preps, fruit-on-the-bottom yogurts, ice cream variegates, confectionery centers, and 100% red juice blends requiring natural sweetness.

Because the FDA defines different baseline standards of identity under 21 CFR § 101.30, reconstitution ratios differ:

  • Tart / Sour Cherry (FDA baseline = 14.0° Brix): To reconstitute 68° Brix Tart Cherry Concentrate, mix 1 part concentrate with 3.86 parts water by weight (a weight dilution ratio of ~3.86:1, representing a 4.86-fold concentration factor).

  • Dark Sweet Cherry (FDA baseline = 20.0° Brix): To reconstitute 68° Brix Sweet Cherry Concentrate, mix 1 part concentrate with 2.40 parts water by weight (a weight dilution ratio of 2.40:1, representing a 3.40-fold concentration factor).

  • Single-Strength Cherry Puree (14°–16° Brix Tart / 20°–22° Brix Sweet): Milled whole pitted fruit pulp that retains natural insoluble fiber, pectin, rich viscosity, and fresh-picked aromatics. Delivers authentic fruit mouthfeel for smoothies, craft beers, and baby food pouches.

  • Cherry Puree Concentrate (28°–32° Brix): Produced by gently evaporating water from de-stoned, finely finished puree under low-temperature vacuum. It roughly doubles the fruit solids while maintaining smooth viscosity and rich body, formulated to remain flowable through industrial dosing systems.

  • Clarified Cherry Juice Concentrate (65°–68° Brix): De-pectinized and fine-filtered to eliminate all insoluble pulp, fibers, and cloud. Yields a crystal-clear, deep ruby or dark-garnet liquid with high solubility that cuts freight costs and integrates seamlessly into clear beverages, seltzers, and gummy candies.

Cherry pits contain hard, calcified shells and inner kernels rich in amygdalin, which can release cyanogenic glycosides if crushed. Brothers International works exclusively with audited facilities that use advanced multi-stage pit removal:

  1. High-Precision Mechanical De-Stoning: Gentle rubber-diaphragm needle-pitting heads press pits through without breaking the outer stone or crushing the internal seed kernel.

  2. Optical & Laser Sorters: High-speed optical cameras scan pitted fruit on inspection belts to eject any unpitted cherries or whole loose pits.

  3. Electronic X-Ray Pit Detectors: Before entering pulping or pressing lines, pureed fruit streams pass through continuous in-line X-ray inspection systems capable of detecting calcified pit fragments down to sub-millimeter thresholds.

  4. Fine Finisher Screens: Puree passes through fine 0.020″ to 0.033″ mesh screens to physically bar any residual hard particles.

  • Functional Beverages & Tonics: 2oz sleep and recovery shots, 100% tart cherry wellness drinks, electrolyte waters, RTD teas, kombucha, and sparkling botanical sodas.

  • Craft Brewing & Distilling: Widely used in traditional Belgian Kriek lambics, kettle sours, fruited Berliner Weisses, dark porters/stouts, hard ciders, hard seltzers, and specialty liqueurs/brandies.

  • Dairy & Frozen Desserts: Essential for Black Forest ice creams, gelato ribbons, fruit-on-the-bottom yogurts, and plant-based drinkable yogurts.

  • Bakery & Confectionery: Formulated for fruit-filled snack bars, artisan pie fillings, pastry glazes, chocolate truffle ganaches (cherry paired with dark chocolate), and pectin fruit gummies.
